Bopshop Korean Kitchen in Berkeley

Here's a Korean take on the hottest culinary trend on the west coast right now, Poke Bowl. Bopshop right now offers Bibimbop, Teriyaki and Chirashi, and the format is similar to ordering Poke Bowl in that you choose the protein (mostly fish, some meat, and some vegan options too) & the base, which mainly means rice, noodles or vegetables.
All the ingredients (the ones that aren't pickled) are exceptionally fresh, especially the fish. The Korean take means there's a variety of pickled items in the Chirashi Bowl, and they're all distinctive, meaning you have many flavors and textures in your one bowl, but then again chirashi translates as "scattered."


Here's the Bibimbop Bowl with Bulgogi (Korean Beef) over glass noodles, with quinoa, carrot, seaweed, kim chee, cucumber, yellow bells and more. 




I got an unexpected treat when I walked past the second kitchen on the way to the restroom: Bopshop staff members were making a new batch of Kim Chee, and they were delighted I was interested in the proceedings. The chef gave me samples of the kim chee mixture on pieces of napa cabbage--talk about an intense blend of garlic and chili. He told me this kim chee is his own recipe, and confided to me he has his chiles imported from Korea. They do have a particular terroir.


Like so many restaurants now, the format is fast casual. I was told by Bopshop staff they plan to expand the menu with more dishes, especially ones with pickled items.
